Contractor Letter Of Interest

My contractor quit near the end of the job, wants to come back?
This contractor I hired, who has proven to be untrustworthy and a thief, quit near the end of the job. Since I still owed him money I told him I was going to hire others to finish his work. He said fine. After he received their proposals to finish his work, he wants to come back and finish up. Sorry, too late you quit and they have already been hired. Now I just received a rather weakly worded letter from his lawyer saying it’s in “my best interest” to have this goofball finish the punch list. What the hell. Where I come from, when you quit, you quit. What do you guys think.
Do you have anything in writing from him that he was OK that you can hire someone to finish the job? Or did you write him by registed mail that you would hire someone to finish his job? He may deny that he told you to quit.
What does your contract with him say about percentage completion and payments? Have you paid him fairly for the work he did?
