How do I find contractors and pricing for a commercial kitchen to build a start-up restaurant?

I'm starting a new restaurant and the need for more accurate pricing estimates for the owner and the bank as kitchen building costs. How do I find kitchen contractors business and how I can shop without wasting time for everyone? Do we need a design approved first? Help!

I would like to make a design first and then have the contractors bid out according to design layout. That way you get the bidding contractors to the same thing and you can compare apples with apples. It will ask you some questions that you do not think your design can alter the design.
